How to sprout Mung Beans

Germinated Mung beans are rich sources of vitamins and micro-nutrients.

1.Soak 1-2 Tablespoons og Mung Beans in a mug for 24 hours

2. Wash them and Spread them in a large plate and cover them with a soaked paper towel or cotton handkerchief for the next 24 hours

3. The beans will sprout and are ready to eat.

4. Repeat Steps 1 and 2 to keep the process going every day

The following recipe is gluten-free and Vegan.

Homemade Kefir


2 cups of Milk ( Cow, Goat or non-dairy milk, for example,Almond, Coconut, Oat or soy )

One Tea Strainer tongue with cups to put the kefir grains insdie it

A packet (1 Tablespoon) of Kefir starter

Two empty glasses

Electric Coffee Grinder

Whole Flax seed

Whole Pumpkin seed with skin

Chaat Masala or Pani Puri Masala (optional) – available in Indian grocery stores


Put the kefir grain powder inside the Tea Strainer Tongue, close it and now put the filled tea stariner in an empty glass. Fill it with milk and keep it in a safe place for 24 hrs at room temperature. keep it in a slightly warmer than room temperature. Putting it in the oven below the range top or microwave (turned off) or on top of fridge works well most of the time.  In winter, you may have to preheat the oven to warm and then turn it off before putting your Kefir glass or cup inside.

Next day, your milk kefir is ready to drink. Simply remove the Tea Tongue and put it in another empty glass and fill this glass with milk and store it for the next 24 hours. This process, like a ritual can go on forever.

Kefir is fermented milk which can be easily made at home. It is a natural probiotic and requires no cooking or boiling unlike yougurt. You can keep reusing the the kefir grains contained in the tea strainer tongue simply by moving it into an empty glass and filling it with milk. You can blend the milk as you like and you can make your favorite kefir, diary or non-dairy.

Kefir is a probiotic and should be eaten fresh. Putting it in the fridge lowers the strength of the probiotic. You can keep Kefir at room temperature for 6-8 hours outside fridge for consuming later, However, morning brekfast is advisable to build your healthy microbiome.

Put one tablespoonful each of whole Flaxseeds and pumpkin seeds (Omega 3 rich) into a coffee grinder to add to your Kefir before drinking it. As an option, you can also add one teaspoon of Chaat Masala Mix or Pani Puri Mix containing roasted cumin seeds, salt, coriander, ginger to improve digestive efficiency

TIps; When you go on a short vacation, wrap the Kefir Starter Tongue in your fridge and start using it upon return. For longer absence of more than a couple of weeks, you can put it in the freezer section and start to use it again after your return.

For non-dairy milk, to keep the fermented process going during winter, you may want to put a pinch of brown sugar or a date fruit in the glass. It is also a good idea to make the first batch in cows milk and then transfer this Tea Tongue (now Kefir Tongue) for te subsequent kefir making with non-dairy milk.

Yogurmet Kefir Starter from Amazon (under $10) has worked well for me for both dairy and non-dairy Kefir. You only need half.a packet (it comes with six packets) and it can last FOREVER. You can gift the other packets to your friends and neighbors to start a Kefir club like your grandmothers used to do with Yogurt Starters or Sourdough Starters.

Tea Tongue strainer is also available online or in local stores – you may have one in your kitchen drawers already.

This recipe is gluten-free and can be easily adapted to Vegan by substituting non-dairy milk.
